Improving spelling when dictation to Mac
There are several words when I dictate that have incorrect spelling,
i.e. people's names et cetera.
How do I access the spelling menu to improve accuracy when dictating so that I get correct spelling?

On Apple applications, (e.g. Pages for Mac) the Edit menu has the Spelling and Grammar sub-menus that you seek. I have never seen Dictation automatically interact with spelling and grammar to correct your content as dictated, or even afterward. Correction is a separate intervention that you do after the dictation.
Do not use Automatic by Language in the application, or in System Preferences : Keyboard : Text : Spelling. Use the explicit language for your locale (e.g. U.S. English, British English, etc.). This will significantly improve spelling/grammar accuracy.
