Apple Card and Unsupported iPhone 6

Why would anyone with an iPhone 6 or 6S get the Apple Card when those phones will be unsupported w/o security updates?

Indeed as the others have told you, you are thinking about this in the incorrect manner.

The iPhone is the vehicle to acquire and manage your Apple Card. But the Apple Card can be associated with your Apple ID. So you could, for example, acquire the Apple Card using an iPhone 6, trade in the iPhone 6 for a later model next month, and pick up where you left off on the new iPhone. (Of course, your iPhone 6 would be erased by you before you sell it or give it away.) Or you can continue to use the Apple Card on the iPhone 6 with an obsolete iOS version next month.
