Thank you for posting in the Apple Support Communities. I understand music skips or doesn’t play when your iPhone is connected to your car’s Bluetooth audio system. I’d love to share some steps with you that should help.
First, I recommend taking these steps: If your iPhone, iPad, or iPod doesn't connect to or work in your car. Restarting your iPhone, toggling Bluetooth off, then on, updating the iOS version, and checking for a car stereo firmware update are all steps that often resolve the issue.
If the issue continues, consider the way in which audio is being played. Test to see if it happens with multiple apps, playlists, or albums. Also, check to see if this happens with streamed vs downloaded content.
Lastly, check to see if connecting your iPhone to your car’s system works via USB cable instead of from Bluetooth. You might also consider connecting another iOS device to your car’s Bluetooth system to further isolate the issue.
