Is it possible to change a child's email address for their existing apple id? I can find where to change mine, but when I try to change theirs or when they try and change theirs, there is no option.

Depends on what the email address is.
If its an iCloud email address it cannot be changed.
If its a 3rd party email address then it can be changed. You need to log in to https://appleid.apple.com/ with the child’s Apple ID and password, not yours.
