How do I uninstall beta software from a unpaired Apple Watch... I have literally tried pairing it as a new watch and even doing the previous backup before the beta profile but it just unpairs itself during the process... PLEASE HELP

You could try clicking on the "Contact Support" link at the upper right side of this page and see if an Apple Specialist will help you or direct you.
How did you get the beta on your iPhone in the first place? There is no public beta and that particular beta really doesn't have a means to roll back. If you are a developer check with your developer forum.
If you are not you might want to just wait until the public version is released.
