the advertisement say that you need iPhone 6s or newer for I watch 3 and 5. The watch 3 has been working with older phones now so now I am thinking do I really need to upgrade my phone if I want either of these watch or Apple is advertising that as it discontinued support for iPhone 6 and below.

watchOS 6 will require iOS 13, which itself requires an iPhone 6s or later. So when watchOS 6 is released, only watches that are still running a previous watchOS will be compatible with iOS 12 or earlier. The Apple Watch Series 5 will probably require watchOS 6.
At some point in the near future, any Apple Watch Series 3 available to purchase new will already have watchOS 6 on it. So it makes sense for Apple to say that it requires an iPhone 6s or later.

If Apple says you need a 6s or newer, you need a 6s or newer. It will not work with the 6.
