How do I switch the Organizer of the family? And if I switch to the Organizer of the family will we still have all our content?

You have to disband the family and set it up again. If you have children under 13 years old, set up the new family first, and then transfer the children before disbanding the old family.

Once you have the new family set up, you should still be able to access all your content if the new family has the same members as the old family.
