There are 3 things to consider:1: will the card support Metal and at least High Sierra? Most of the recent ones do. 2: Apple and
nVidia don't play nicely anymore. I have no problem with nVidia cards, and I'm sure most of us don't, but Apple does. They won't
"sign off" on the nVidia Mac drivers, so if nVidia wants to provide a Mac driver for their cards, it's entirely up to them. 3: Apple has a rough list of cards that'll support Mojave for sure, and some that should support Mojave. That is available Here:

you may wish to check xlr8yourmac.com to see what other Mac users' have done/have tried, and how well it worked out for them. As well, Apple have said that the Radeon VII should be compatible with Mojave, but I don't know how much that'll cost.
If you are really desperate for a Mac compatible card, you can buy a PC video graphics card that you think has enough power and memory, and get it flashed to work with Mac, if it doesn't say specificially that it does work with Mac. Again, you may have to check xlr8yourmac.com to see which ones will work, which ones might, and which won't. If you install a non-flashed PC video card in your Mac Pro, it should work, basically, but.....not until the video drivers load, so if you need a boot screen, or need to do some troubleshooting, and you need to see which hard drives you have, and are potentially bootable, for the recovery partition, then you're out of luck.
