I'm getting a iMac 21.5in soon (i7 6core 8th gen with 16gb ram), and the Radeon Pro 560x isn't what I really am looking for.
I was wondering was the price estimated would be to replace (apple store) the 560x with an AMD RX 570 (its compatible).
(also i may buy the gpu myself if they will put it in to save some money)

This cannot be done. You can only order the computer with the GPU's available. After you get the machine the GPU cannot be replaced by anyone. The GPU's available in 21.5" models are:
Intel Iris Plus Graphics 640
Radeon Pro 555X with 2GB of GDDR5 memory
Radeon Pro 560X with 4GB of GDDR5 memory or Radeon Pro Vega 20 with 4GB of HBM2 memory
Those are the ONLY options available.
The only after market GPU upgrade is an eGPU. An RX 570 eGPU built from new hardware would cost $330-$500 depending on enclosure/card preferences.
What I meant by the question is what would it cost to replace the gpu, after I get the computer, to the RX 570 now I realize after.
What are you planning to do with 2019 21.5" iMac, and what do you mean "now I realize after?" Like others said, better to buy with all specs now, no can upgrade later.
The iMac GPU has not replaceable since the Late 2012 models. It is not a separate card or component. It is integral with the logic board.
