The manual (https://support.apple.com/en-il/guide/ipad/ipad9940ee8d/ios) states it is possible to wake the iPad by tapping on the screen. Is that supported on iPad Air 3? I can’t seem to be able to use tap to wake no matter what on mine.

That should really be rephrased! I thought that was about the pencil wake, not the whole tap to wake. If the whole tap to wake paragraph were preceded by “on supported models”, it would have been much less confusing.

Tap-to-wake is not supported on iPad Air 3.
They do. The "supported models" text in blue, in the Tap to Wake section is a link, that opens a popup with the supported models.
