Since doing the update, I get this message trying to open Notes.

Try deleting and re-installing the Notes app.

What "Notes" app might we be talking about?
If you're talking about Apple's Notes app, which was updated perhaps four years ago or so, you may find it in the App Store by searching for "Apple Notes" there.
If you mean some other Notes app, then you probably need to contact the App developer.
It’s the Apple notes app. Others did the update and it updated fine. Just looked in the App Store and since it’s already installed it gives me the same error. Assuming Apple is working on this bug fix but I don’t have a week to wait for access to my notes. Hoping someone else had the same issue and was able to resolve it.
Ah. Yes. Ok, deleted and reinstalled. It appears to be working. Had to active the iCloud on it. So far it’s downloading some old notes but no sub folders I had set up. I’ll give it some time.

I lost all my subfolders as well. Very annoying. That's no update, that's a major decline! Have you worked out a solution yet?
