I’m also trying to figure out the answer to this. The data source goggles for the Siri face seem to have been removed in watchOS 6.0.
I have the same issue.
Prior to Apple Watch OS 6, the Siri watch face had the ability to control which data sources it would draw from. I can’t find the ability to control sources now, which is annoying as it causes the face to be polluted by sources I don’t want to see on the face.
