I’m using an old iPhone 6 for my daughter without a SIM card. She has WiFi, iMessage turned on, and can send a text to my iCloud, my wife’s iCloud, and even my fathers iPad via his gmail account but cannot text to her best friends iPod touch via her gmail? As soon as I type her name in the header it turns green for MMS and therefore won’t send.

Thanks for using Apple Support Communities! You've got a great question about being able to send an iMessage to a Gmail address, and I'll be happy to help out.
Since your daughter is not using a cellular plan, she can only message with iMessage (blue) to an Apple ID.
Do you know if her friend's Gmail address is also an Apple ID?
If it is an Apple ID, then it sounds like there is something within her contact info that is indicating either a phone number, or may have not been entered correctly.
You can delete the contact, then re-add it. Or edit the info. This page has the steps to do so: Add and use contact information on iPhone
