Can't update Apple Watch series 5 to watchos 6.0.1

This sounds like Apple has a software update bug, introduced when they allowed the iPhone 6 to update the Apple Watch Series 4 to 5.3.2

Ever since then updates and upgrades have been messed up.

I am having the same issue. watch app is saying 6.0 is the latest software even though 6.0.1 came out 2 weeks ago. I am on iOS 13.1.2 as well.

Same thing happened to me. I opened a case with Apple Care yesterday afternoon. They had me unpair and repair my watch then this morning the watchOS 6.0.1 appeared in my Watch App on my iPhone. Update installed with no issues.

You do not mention the iPhone you have. Your iPhone must be a 6S or newer.
