When I open Boot Camp Assistant and click "continue" to follow the installation processes the application quits.

Your iMac is expected to a have a single Fusion drive. Is there a specific reason, you have it split as two separate APFS Containers on top separate physical drives?
See Catalina Partition 28gb - Apple Community as an example. You will need to rebuild the the single APFS Fusion drive.

First I upgraded to Catalina. The Boot Camp Assistant was failing already then.
I tried to make a "clean install" - recovery mode, partitioned Samsung SSD 860 EVO 1TB Media back into one (what was partitioned to Macintosh HD and Macintosh HD Data by Catalina update) and reinstalled Catalina from macOS Recovery mode.
It seems in the process something went wrong - how should it be repartitioned? Which volumes to be erased?

Yes, and under certain circumstances it may not work, so the fall back is a set of manual steps. There is an example with commands in Boot Camp Assistant in Catalina - Apple Community.
From macOS Terminal, post the output of

Do you have a Time Machine backup of your main macOS installation? We need to erase/rebuild your APFS Fusion drive.

Got it done with diskutil resetFusion - fortunately worked and manual was not necessary.
