iOS Update/Email Not Syncing Across Devices
Ever since updating to the latest OS and iOS (Catalina & iOS 13.2), email does not sync between iPhone and MacBook Pro.

Ok - here's what I finally did. It fixed it for me.
On your phone or iPad go to settings: Password & Accounts
then under accounts, click on the email in question, then Advanced
In this pane, make sure mailbox behaviours are correct ( drafts to drafts, deleted mailbox to trash, etc). Also make sure that under the second pane down under "Move discard messages to:" that the deleted mailbox is checked.
I think I did this on both my iPhone and iPad and things are working smoothly again. Hope this works for you.
I had the same issue but it seems iOS 13.2.2 had fixed it.
Email does not synchronise between devices.
Email is accessed by devices from a central location. IMAP (and similar) emails are stored on your email service provider's server. POP3 emails might be, but are often not
Your route to solve your question is to add email accounts correctly to each device you wish to have access to them. Emails then appear on each device independently, not synchronised. They look the same, sometimes with a slight delay caused by the period each device takes to refresh from the central email server.
I wish I could say "YESSSSS", but sadly, no. And after only ONE contact from Apple, I have heard nothing back from them. I have had one thought which was to "Wipe" my phone and set it up as a "new" device, but that is SUCH a hassle and I don't want to Restore from a Backup for fear that the problem will exist.
Humm, thanks for your input and I'm glad that it worked for you. I'm actually up to iOS 13.3. Problem is still there. Apple contacted me once, but nothing since. A little disappointed.
I am having the same exact problem. Did you find a fix? My iPhone email is becoming huge because it isn’t syncing with what I do on my MacBook Pro (since updating to Catalina)
I have a similar issue between a MacBook, iPhone and iPad. In the past something deleted on one deleted it on all the others - now I have to do it on each device. Irritating.
Has anyone had any luck in sorting this? I've deleted and reinstalled email accounts on mac book pro, iPad pro and iPhone 8 but still get same problem, and its driving me crazy now!!
