I have installed Catalina onto my additional iMac (late 2015) which was on Mohave 10.14.6. After installing Catalina I cannot open or use any Microsoft Office 365 v. 16.30 products.
Can I go back to Mohave? Is there an update from either Microsoft or Apple that will address and amend this problem?

Office 365 and Office 2016 both work with Catalina. Make sure you have all the product updates installed.
Why not bridge the time it will take for Microsoft to update their 16.30 release, or the next Catalina point update — with the free LibreOffice v6.3.2.2 or later. It is a Microsoft Office clone, and is far less expensive (time) than fleeing back to Mojave. We are fellow users, so neither Apple nor Microsoft confide in us about their future product planning.
If you performed a Time Machine backup just prior to the Catalina upgrade, and did not reuse that Time Machine drive for subsequent Catalina Time Machine backups, then it is possible to boot into Recovery and Restore from that Mojave Time Machine backup. Otherwise, the only way back is if you had cloned the Mojave drive to an external drive using Carbon Copy Cloner, or Superduper software.
That version should work fine. Have you contacted Microsoft?
I have v16.16.15 and do not have any problems with Catalina.
