When allowing apps to access photos, locations, etc., how much access do they have?

Like can apps sneakily upload my all of photos automatically in the background without my user interventions from my iPhone 6+ (iOS v12.4.2)? If so, then is there a way to see what is being transferred and customize their accesses?
