I have a NVIDIA Quadro K5000 for Mac installed in my mid 2012 macpro. The system report says its Metal supported, but when I try to install Mojave it says I do not have a metal compatable video card. Is there something else I need to do?

At the moment you are about to start the Install, look on the menus for command: "Show Log", and choose it.
Start the install, and wait for it to fail. Copy the last 10 lines from the log, as they tell why it failed.

That version should be more than adequate.
When I tried an Install without the appropriate graphics card available, it completely unambiguously posted a message in the log that said there was not a Metal-Capable graphics card, and therefore it could not proceed.
Your Installer log does not point out anything that is obvious to me, except that it seems to be very confused. Is there anything unusual about your Boot Drive? Rotating or SSD? MacOS Extended or already APFS?
I think you may want to consider making a new USB-stick Installer.
What version is Boot firmware on that Mac?
(careful not to post your serial number)
NVIDIA does not have any drivers which have been approved by Apple.

Make sure your macOS is running the latest 10.13.6 and remove all other graphics cards from your computer besides the K5000. Mojave will not install if any non metal capable cards are present.
Yes I am running 10.13.6 and only have one graphic card.

That is what I expect should be trouble-free.
