How do you change metadata of audiobook files in ibooks?
This used to be easy in iTunes. I can't figure out how to do it in iBooks. Alternatively, is there a way to go back to the old itunes setup?

They took the ability away to change Metadata within books, my suggestion is within the books app Send feedback.
Within books drop down menu
Books - Provide feedback
And create a ticket with Apple support.
At this point you have to drop back down to Mojave, Which can be a painful procedure :(
