If I have a monitor with a HDMI port, can I connect a Mac Mini to it using the Mac Mini HDMI port? In other words, does the monitor need to specifically be able to display an Apple product or by nature of the HDMI to HDMI it will work?
Yes that is the general idea.
You can also use the Thunderbolt 3/USB-C ports with adapters to connect additional HDMI, Display Port and DVI displays.

Some of them could use an adapter, depending on the other hardware involved.
My mini has HDMI port, but uses adapters for other displays. The build year model
will limit (or could open) possibilities. + my much older mini also opts w/ adapters.

I would be purchasing a new mac mini With a HDMI. The monitor that I would purchase would also have a HDMI (2).
So....the monitor doesn't need to be "Apple Compatible" since it is HDMI to HDMI - correct?
HDMI monitors are plug and play with Apple, Windows PC’s and Game Systems that support HDMI. Therefor, you do not need to worry about looking for a Mac compatible HDMI monitor.
