i ordered the new iPhone 11 pro from At&t. At&t suggests downloading their mobile transfer app and uploading the information from the old phone to the app in order to transfer all information to the new iphone. Has anyone had security issues with this process? Is there a more efficient way to transfer from phone to phone?

I'm not sure what you think the security issues could be. If you are an AT&T customer, they already have as much information on you as they are ever likely to need or want (and, as I recall, they do sell it). So, that ship has sailed. I've never used AT&T's app but Verizon has something similar and it works just fine.
If your previous phone is an iPhone, why not use iCloud?
