Late-2012 Mac mini with dual large displays

From the Apple specs on this Mac mini:

https://support.apple.com/kb/sp659?locale=en_US

Support for up to two displays at 2560 by 1600 pixels, both at millions of colors

Can anyone explain how this can be done? The mini has one thunderbolt port and one HDMI port. It seems pretty definitive from specs on multiple sites that the HDMI port on this machine is limited to 1080p resolution. So there must be a way to hook up dual displays to one thunderbolt port. But how?

I know that Apple's own thunderbolt display can be daisy chained, and that might be one way to do it. But that screen is long discontinued and even used is 2x the prices of a brand new nice 3rd party 27" display.

Also note that Apple's 27" was 2560 x 1440. By saying the mini supports dual 2560 x 1600 displays, you are strongly implying that it can work with two large third party displays.

So it sounds like I need a box that has thunderbolt on one end and two displayports on the other. But I haven't seen anything like this. I have seen ones that have miniDislpayport on one end and displayport on the other. Which is physically the same as thunderbolt but I don't think it will give me full dual 2560x1600 on two displays.

Is there some magic box or combination of boxes out there that will let me do this? I'm seeing lots of Thunderbolt3 to dual displayport adapters out there but nothing for my Thunderbolt 1/2

When I had 2011 and then 2012 I used Apple Thunderbolt Display (2560x1440) via Thunderbolt and Samsung (1920x1080) via HDMI. All worked fine. Then I changed mini to 2014 and Samsung to LG (2560x1080) and all works fine. Also it is possible to connect second TB Display instead of LG into second TB slot or in TB slot on first TB Display. The same thing on 2011-2012 minies - you can connect two TB Displays one into one. I see no limits at HDMI.

Besides being discontinued, that box was super expensive.

But Apple's Thunderbolt 3/Thunderbolt 2 adapter specifically lists as being bidirectional. What do you think of hooking up a USB-C to Dual DisplayPort adapter up through one of those, to a 2012 Mac mini?

I feel like there's a chance it could work. And it wouldn't be super expensive if it did. But it could also easily NOT work. Hrm.

No, that OWC dock won't work because it has a built in cable with a male Thunderbolt 3 USB-C plug. It expects to get power through that connection. The Apple Thunderbolt has a male USB-C plug, and doesn't provide power, so even if you could find a F-F USB-C adapter, it wouldn't work.

You need a dock with its own power supply and s female Thunderbolt port.
