Thousands Separator
the Thousands Separator does not work in Numbers. I do not know why. The default language on my MacMini is italian... any idea?! Thanks for your help! :)

System Preferences > Language & Region > Advanced > General > Number separators
So even with my Language > English and my Region > Australia, I can have space as the thousands separator.

The separator should work as long as the value in the cell is formatted as numeric. If it is a text string, the separator will not work.
On a related note, is it possible to adjust what character is used as the separator, or is that based on your country settings? Numbers uses a comma for me, but I would prefer a space.
It is the issue for all the apple system after latest upgrades. For example in Numbers, Keynote (Mac, iPhone) and even in Calculator App on iPhone. The separator works well on numbers above 9.999, but under 10.000 does not work - what is obviously error. I send feedback on apple.com/feedback and waiting for the solve of this problem. Please let them also know about it!

Here you can see. Separatore migliaia=thousand separator. I would like to see the numbers in this formula: 15 427, and not like this: 15427.
It is strange, but if I open a new file the thousands separator works without problem, but in one of my certain numbers document it does not work, what you can see in the attached screenshot.

Some features that can be only modified in MacOS nevertheless carry over to iOS. I was not sure something like this would.
Unfortunately, this does not seem reliable on my machine. Latest Mojave. Changed the Advanced Numbers separators and they were reflected in that screen but even after restart only showed up once in a table. Usually I saw my standard comma.

Thanks for the reply. I should have mentioned, I am using Numbers for iOS (iPad).
It appears the customization options on mobile are limited to calendar (Gregorian, Japanese, or Buddhist) and Temperature Units (C/F).
