How do I back up everything to iCloud except my photos?

You can exclude specific things from iCloud Backup via Settings > [username] > iCloud > Manage Storage > Backups > [device name] > Choose Data to Back Up.


Note that if you have iCloud Photos turned on to sync from the device that the photos are not included in any backup (i.e., the above would have no effect).
