I need to know how to control my childs iphone settings from my phone, as well as how to not have my kids get my texts and emails?

To start with, do not share your Apple ID. You need to set them up with their own, and activate Family Sharing. From there, use Screen Time and Restrictions to manage their devices and purchases. Set up Family Sharing - Apple Support
