Does the current (2019) iMac support optical digital audio?

Nope, the 2015 iMac's were the last to support optical audio output.

Thanks. Are there any alternatives you can suggest: adapters or the like. I want to send a digital signal to a pair of AuioEngine HD6’s in order to use their built-in DAC and I need to use a wired optical connection or Bluetooth, and I would prefer the optical as it is more stable.

I don't know that anyone here is an expert on that, you can google usb to optical adapters as well as we can. I certainly doubt you want to go audio to optical.

but there are other less expensive USB to optical digital adapters that may or may not work.
