On the Catalina macOS the iTunes is gone and is now "music". I used iTunes to turn music albums (mp3) on my computer into playlists and then upload them into my iPhone.
Since during most of my day, listening to streaming is nearly impossible and I do need this service, How do I manage my music files into my apple mobile devices from now?

I think it's just different, really. Apple migrated synchronisation from iTunes to Finder, but it is very similar, though tells you less about what is going on.
I imagine WiFi may synchronise, too, but I am an ardent tetherer, so I suggested the way I know works 👍
You have an iMac Pro and an iPhone, so the transfer is still possible.
Now, the preferred method is file transfer is syncing. In Catalina, the Music playlist should be on your desktop; to transfer this music to your iPhone, sync.
Not working...
I tried to sync the playist (or one track for that matter) with airdrop.
The iPhone (7) lets me save it to the icloud, not the the device itself.
Any other suggestions?
