Sometimes I have to compose emails on my Mac, but I dread it. For some reason a normal-sized font is microscopic on the compose screen. My emails end up with tons of errors.
The only solution you’ve proposed (in 2016) is using the awkward accessibility zoom, but that’s ridiculous for people who don’t need it for any other application. Just make it larger.

Have you tried going to Mail > Preferences > Fonts and Colors > Message Font and setting it to a larger size??

Mail doesn't work that way. Those settings have no effect on what your recipients see, they are only for what you see.

In each outgoing message individually you have to go to the font menu and set it there.
(Of course they will only see the font you choose if they have that font installed on their computer, and if they have not activated a setting like "show plain text version only".)
The standard font looks fine on all my other devices. I shouldn't have to inflict a huge font on the reader of my emails.
