I noticed after updating to Catalina, there's no option to play an mp3 or similar audio files from the finder window (the little play button that would appear when hovering with the mouse is gone). Did Apple seriously get rid of this along with iTunes?

No, they didn't. It's still there on my machine in icon view, column view, gallery view and, of course, Quick look.
