I deleted my watch from my settings. The Apple Watch atch is now locked

I got an iPhone 11 and gave away my old iPhone before I paired my watch. Now, I have really made a mess of things. I deleted my watch from my settings. The watch is now locked. The watch app on my new iPhone opens to pairing a new device but nothing happens.

I cannot unlock my watch and pair the new phone. In trying to do this on my own, I have created a nightmare. Help!

You need to go to icloud.com and remove your old phone and your watch from devices, you will of course need the apple id that was used to setup the watch and the phone, once this is done you should be able to pair the watch to your new phone.
