For Bluetooth, maybe about 40-50 feet (15'ish meters). This will depend on walls and floors between, and if there is a lot of radio signal noise around you, which Bluetooth standard your iPhone is using (the latest Apple Watch 5 and iPhone 11 have the best Bluetooth standards and the best range, which might well exceed the 50 feet).

If your iPhone carrier supports WiFi calling, and your Apple Watch is on WiFi (such as around your home), it can call directly via your WiFi.

This all assumes you are talking about the GPS only Apple Watch. The Cellular model can just use the cellular radio.
