How can I know the total size of my music in the MUSIC or iTunes application please?

Click "Songs" in the left sidebar. In the songs list, make sure nothing is filtered or hidden, and then look at the Status Bar at the bottom. You will see total number of songs, total play time, and total size in GB.

If you don't see it, enable it at View > Show Status Bar.
