This started happening to my Apple Watch 1 series sport when I upgraded phones to the i-phone XR.
I contacted Apple support and discovered that there is a recent iOS upgrade to 13.6 (issue was occuring with 13.5.1).
I'm happy to say that following an update on the phone and a un-pairing and re-pairing exercise the watch is working as expected (so far).

I've had my Apple watch for 3 months and everything was fine until I installed the MyFitnessPal (MFP) app on my watch. It started syncing with my phone multiple times a day. I uninstalled the MFP app on my watch and it hasn't tried to sync again. Just throwing it out there for anyone who has this app on their Apple watch. Might be worth a shot.
From my own personal experience, I fixed it with a combination of things - not sure which one worked! I changed my appleID password and removed most third party apps from the Watch. Still get all the useful app notifications but not had a sync issue since.
I’ve reset my watch, unchecked the auto update and removed all 3rd parry apps a week ago and the watch has not synced since then. I’ll start to perform an app deduction to see if one of the apps is the cause.
Did it finish the last update? Don't forget while you are updating the watch must be on the charger.
Have you tried force restarting both you iPhone and your watch? (iPhone first)?
Have you tried resetting the connection between the watch and your phone?
Try force restarting to see whether the problem stops.
That’s what a few of us are thinking. One other customer has an old watch like I do with watch OS 4.3.2 (this is the latest watch OS we can get) and an iPhone 7. This person’s watch was syncing daily until they upgraded the OS to 13.3.1 (marked improvement) after which the daily syncs stopped. They have no added apps on the watch.
I have the same combo of devices with the same OS’s and had one recent sync occur last week since upgrading to 13.3.1 a month ago. I just removed the one third party app I had in my watch (messenger) since another customer had removed their apps on their watch and it stopped their daily syncs. I am waiting to see if removing the app totally removes these syncs because once they start, it goes on forever! So inconvenient when you’re in the middle of a workout! Didn’t want to have to upgrade to a new phone just yet!
It’s interesting because when I posted a few days ago my watch was syncing several times that day. I plugged it into the charger and checked the Apple Watch app on my phone and was able to get it to complete the sync much faster. I also deleted some apps off of my watch and it hasn’t done the syncing. I’m wondering if it is related to some apps. I have the IPhone 7 Plus and the series 1 watch.
I’ve been suffering this problem but just the other I upgraded the OS to 13.5.1 and the problem has stopped for now.
I just removed it. Let’s see what that does!
The other possible suspect I’m thinking may be photos. On the watch I’ve had the “favorites” album selected on my Watch, which has about over 100 photos.. (seems you can’t turn off photos on the Watch?). My favorites album did change recently which may have triggered the last sync. So I changed to an album that has three photos that I will remain static. If customers select their entire album to sync to Watch, even though there is a 100 photo limit on the watch, it may trigger the daily updates if you take photos often. :/

Interesting question about having iPhone 7 with this problem.. seems many in this thread stated iPhone 7. Watch series 1 with 4.3.2 os, seems to lessen the occurrence. Smanfer made a suggestion in the thread about third party apps on the watch. I have deleted the only third party app. So far so good.. Apple store guys have never heard of these sync problems? Wow.
I gave up waiting, reset and unpaired and started again as a new watch. See what happens now 🤷♂️ I’ll contact Apple support though.
Interesting that you have an iPhone 6S having this problem too. We all thought it was iPhone 7 only.
Mine just did it this morning for 30”, last time it synced was 2 1/2 weeks ago (for 2 hours).
I took off a third party app, and set a much smaller photo library with only 3 photos in it (can’t seem to select No photo library for this watch). One improvement, the sync didn’t go on forever today and sync is still once every couple of weeks.

Just to update: My Apple Watch 3 had become essentially unusable with my iPhone 7 due to this random syncing issue as I explained earlier. Since upgrading to an iPhone 11 about a month ago, I have had no further problems with the Apple Watch. Of course, I realize this is not an acceptable solution to this issue, but I wanted to let others know my experience in case they happened to be considering upgrading their iPhone for some other reason.
OMG LOL well it appears my iPhone has a hardware fault that has now escalated after a complete reset to a continuous boot loop, can't even switch it off. At some point in the rebooting process it was triggering the watch to re-synch. So in my case it's a hardware fault on the iPhone not the watch.
