If I wanted a few games from Apple Arcade, if I canceled my membership after a month would I still have the games I got?

No. Games from Apple Arcade will only work while your subscription remains active. If you're still in the trial period the service will cease as soon as you cancel it. Once you are paying for it and choose to cancel an upcoming renewal you should still have access to the games up until that renewal date.
