I enjoy playing music on my iPhone. But if I play the music while my screen is off, will it still use my battery even though the screen is off? If so, how fast will it use my battery?

Yes, it will drain the battery, unless it is plugged in and charging. The charge would be slower.
As for how fast it would drain the battery, that would depend on the battery health and the volume (sound) you use.
