You can actually Use iTunes to sync your iPhone, iPad, or iPod with your computer, which will allow you to move music, videos, or other items from iTunes over to your iPhone.

When you see this message, is there an Install button in the window? This is usually a small update to either macOS itself or iTunes. If you're concerned at all about completing the installation of that update, I'd recommend backing up your Mac using Time Machine prior to clicking update.

Thanks for that. macOS Mojave actually can still run 32-bit applications. The complete swap over to 64-bit only applications takes place within macOS Catalina. More info on that is available in 32-bit app compatibility with macOS High Sierra 10.13.4 and later.
If that's something you'd consider doing, and your Mac meets the system requirements, that's a possible avenue forward. You can learn more about that in How to upgrade to macOS Mojave.
When clicking on the Update button that you were presented with, did it bring up the App Store, or did something else come up? If you haven't clicked it up to this point, that'd be a great next step.

This is what came up. See screenshot attached. As you can see it just wants me to trust that the Install button will do something wonderful. I don't ever "Install" something without first knowing what it is and what it will do.
I understand and successfully use the Software Update processes for macOS and iOS. There were no outstanding “updates” for either device, only a macOS Version Downgrade from High Sierra to Mohave/Catalina which I’m not ready to execute because of 32 bit software I depend upon. So now that I’ve more fully explained the background of my dilemma, I again ask my original question.
To add to what I posted at 5:30pm today, (Mountain Time Zone), what exactly is incompatible between my iPhone and my Mac given what I've already indicated? Lisa says, just update to Mojave, but doesn't say why. Why in the Apple world do I get a message without that specific information, and why doesn't the Support Page that I land on when I click "Learn More" at least answer that question? It is disenfranchising for Apple to disable the connectivity between a 4-year old Mac and a 2-year old iPhone, both of which have all the available updates for fairly recent OS levels I'm running, and then not tell me what exactly to do and why.
Install the software. It is a patch to iTunes to allow it to communicate with your device. It is not a stealth install of Catalina.
