Can I set the hard disk to appear on the desktop as the 'Macintosh HD Data' partition alone so I can use the HD in the same way I used to? Having a pretty much locked volume appear on the desktop seems pretty pointless.

You shouldn’t see but one drive and it should not have “ - Data” in the name.
The drive that appears is a synthesis of the two Volumes.
If you are trying to write to the root level of the drive, you can’t. That has nothing to do with the Read Only Volume in Catalina.
