does the backup of the include the Apps?

Does the backup of the iPhone using Macbook (finder) include the Apps?

if so, does it include what's save inside the Apps? e.g videos ..

No. It includes in app data for apps whose developers coded that into their apps, and it includes a 'list' of installed apps that will be re-downloaded from the App Store after the backup has been restored.
