How can I manage when to upload to storage instead of automatic?

Like millions of rural Americans, I have very slow DSL internet connection. When working on documents on my Mac, the automatic upload to storage slows other internet data exchange to the point of sometimes knocking me offline. I thought deselecting System Preferences > iCloud Drive > Options > Desktop & Documents Folders and then reselecting it at a later time would work, but when I removed the check mark I got the message "If you continue, items will be removed from the Desktop and the Documents folder on this Mac and will remain available in iCloud Drive." Does that actually mean all of the documents on my Mac will be deleted, and available only on iCloud?

Three is no way to dictate when syncing will take place. One strategy may be to work "offline" until you wish too sync. That may not resolve your issue.

This can be reversed and you can retrieve your iCloud based files back to your Mac at a future point.
