I’ve had an old, non working G5 iMac in the trunk of my car for a couple of years. My question is, if I remove the hard drive from the G5, is it possible to transfer everything (photos, burned music from iTunes) to a 2014 MacBook Pro?

Yes, if the drive still works. Just put it into a USB 3.5" enclosure or on a USB to SATA adapter and plug it into to your other Mac. for an example, see > https://eshop.macsales.com/item/NewerTech/U3NV2SPATA/
