Stolen iPhone

If my phone is offline and they probably took the sim out already with data, that means if they open the phone the “Find my iPhone” won’t work... is there anyway I can get my phone back? Can they easily take the passcode out and open my phone??????

There's no data on an iPhone's SIM card. But you'd better block that SIM contacting your carrier.
