I would like to use the flatbed scanner on my HP OfficeJet Pro 8710. It t does not work anymore with the HP Easy Scan icon in the Doc.I am using iMac 27" 5K with OS 10.15.2 and an HP OfficeJet Pro 8710 printer.

HP may no longer support that software or scanner in Catalina.
Open Image Capture and give it a try.

FWIW I've never used any manufactures scan-ware, only Image Capture for many, many years.
