I have just bought a bluetooth dongle for my Ipod classic but how do I pair it with bluetooth handsfree in the car

You'll need to follow the pairing steps in both your car's manual and the dongle's manual for pairing.

The iPod is not really involved here.

Basically set your car's media center to pairing mode as per its own instructions, and then follow the steps in the dongle's user guide.
