Thanks for the post. If I understand correctly, you're having some issues updating your Apple Watch and the issue persists after you've deleted the update and tried again. Is that right?
What exactly is happening when you try updating? This resource has some great information for reference: Update your Apple Watch. Have you covered both the "Check compatibility with watchOS 6" and "Before you begin" sections? Also, have you covered each step under the "If you need help updating" section?
Also, which Apple Watch and iPhone models are you using?
