Cannot back up iPhone 11 Pro to MacBook Pro

All devices fully updated. I connected my iPhone 11 Pro to my MacBook Pro with Catalina.

When I click on my iPhone in the Finder window it only gives me the option to set up as new or restore from an old phone's backup.

I want to do neither, I just want to back it up as a backup to the iCloud backup...

I've tried using iTunes to create the backup on the Mojave Mac, and Finder to create the backup on the Catalina Mac. Just like Apple recomends. On BOTH Macs the first screen displayed when connecting the iPhone7s to the computers is the same. It offer two choices only: Set up a new iPhone. Restore the iPhone from an old backup. There is NO choice to create a new backup so I can transfer my information to the new phone. Backing up to the cloud is not an option for me. My brand new iPhone11 remains in its box! I remember a time when Apple products were reliable.

New phone no back-up I recently bought the new iPhone 11- my previous phone, iPhone 8 plus was backed up onto my MacBook Air- I no longer have the 8 plus phone. When I connect my new iPhone 11 to the MacBook Air, it does not show up ANYWHERE on my MacBook for me to transfer the back up from the previous phone. I am not sure why? Thanks!

iPhone backup to Mac MacOS 11.8 Big Sur on MacBook Air ios15 on iPhone XS Trying to back up my iPhone to my MacBook. When I plug the phone in via lightning and USB and start Finder, I click on the iPhone location and I get a window that says “Welcome to your new iPhone “ and it gives me only an iPhone set-up or restore option, no backup, no "general” or other menus. My wife’s iPhone 11 does the same thing with her phone and MacBook Pro. Can anybody tell me what I’m doing wrong and how to fix this?

Choose to set it up as new. Every time I've chosen that option, I'm just taken to the iTunes (now Finder) screen for the iPad where I have the option to back it up.
