I bought the MacBook Pro 13" 256GB 2019 model from a third party store. Can I get an AppleCare plan? It says I need to update the date of the purchase somehow.

No, it was a shop
The Shop should sell Applecare I believe.
Sadly, they do not. Just got a reply from them

It's a third-party shop selling computers, not specifically apple products.
