Signed up for 1 year of Apple TV+. But when I select a channel I want to watch (ie. ESPN) it asks for my TV service provider (ie. Cox or DirecTV). But I don’t have a provider! That is why I signed up for Apple TV+! So what good is the Apple streaming?

The Apple TV App is not the same as Apple TV Plus
Apple TV + is Apple Original content. It’s a channel found within the Apple TV App. The shows included in your subscription will have the tv+ logo on them - those are free.
This is not like Netflix or Prime etc, where all is included in the one App.

ESPN is not something you get from Apple TV+. A subscription to AppleTV+ gives you Apple's original content, not anything from any other network.
