Lost photos and videos
When I changed my phone from a 6s to a 8 I initially transferred everything over, but then I gave my father my old phone and he deleted everything off it on my Apple ID, I can’t seem to gather my photos or videos back.

If the old phone was signed into iCloud using your Apple ID when he deleted the photos, he deleted them from iCloud. That change would sync to your new phone.
Have you checked the Photos app and at iCloud.com/Photos for a Recently Deleted album?
