Is it possible to run Boot Camp on a 16" MBP?
I bought a Maxed out 16" MBP and will be running Boot Camp because, I want to play games. is it possible to do so or do I need a separate computer?

Yes.
You can install Windows using Boot Camp Assistant or using a virtual machine like Parallels, Fusion, or VirtualBox. Windows performance will be better if you use Boot Camp Assistant.
Sorry, what I meant to write was, is the processor and graphic cards good enough so that there would not have video issues? I've seen some videos of folks using Boot Camp playing GTA-V and the video quality isn't all that great.

You should not expect the same performance as a Gaming Desktop. The GPUs are 'mobile' GPUs, and there is thermal throttling. If you want to consider an eGPU (and an unofficial method to make them work in Windows), it may give you better results than the built-in GPU.
